Why exactly are these mesh screens/mats smaller than the stainless steel tray itself? Why are they not the same size like the fruit roll up trays?

They sit on top of the stainless trays because they are too flexible to use by themselves.

The photos make these mesh sheets look plastic. Can someone verify they are in fact stainless steel?

They are plastic. The description is confusing I agree. It’s referring to the stainless steel dehydrator, not the sheets for sale. They are rigid and hold well

Width is 12 inches Length is 13 inches
