How do you use this on steak as a precook marinade?

I love Shio Koji and use this brand. Here's a recipe for Japanese Shio Koji steak https://www.alldayieat.com/recipe/japanese-style-steak-with-shio-koji/ I also use it make a fabulous roast chicken. I marinate in Shio Koji then wipe off the excess (it browns beautifully but it can burn). This is a wonderful Japanese cookbook, btw, and has a recipe for Shio Koji chicken. https://www.amazon.com/Donabe-Classic-Modern-Japanese-Cooking-ebook/dp/B00TCI531C/ref=sr_1_1?crid=13ECIOSLFRYPP&keywords=donabe+classic+and+modern+japanese+clay+pot+cooking&qid=1559404821&s=gateway&sprefix=Donabe%2Caps%2C204&sr=8-1
